1 tbsp. of vegetable oil

½ medium onion, finely diced

1 x 14-oz. can of black beans, un-rinsed and drained

1 x 14-oz. can of kidney beans, un-rinsed and drained

3 garlic cloves, minced

1 tbsp. of pureed ginger

2 large tomatoes, chopped

1 tbsp. of pureed tomatoes

Kosher salt & black pepper as desired

1 cup of vegetable stock

1 tbsp. of filtered water

½ tbsp. of corn starch

1 handful of arugula

To serve: cooked rice as desired

Instructions:

Cut the baby potatoes in quarters. Add to the air fryer and add the vegetable oil. Set the temperature to 220 degrees F. Cook the potatoes for 9-10 minutes. Then, add onion. Cook for 4 minutes more.

Add the garlic, beans, tomato puree, tomatoes, ginger puree & seasonings. Pour over the vegetable stock.

In a small-sized bowl, mix the corn starch with the filtered water till smooth. Add to the air fryer. Cook for 15 minutes more.

Add the arugula. Cook till it wilts, 4 minutes more. Serve hot over cooked rice as desired.
